Lake House - Our Producers
As part of our overall policy of wherever possible reducing food miles and developing a personal relationship with actual suppliers much of the produce used in our menus at Lake House is regionally grown or produced.
Some of it is organic but mostly it is the result of great care and passion on the part of small growers who are changing the face of agribusiness in our state, and for whom biodiversity and sustainable agricultural practices are firmly on the agenda. Lake House also does not knowingly use any genetically modified products. This season amongst the specials as well as the regular dishes on our menus, you are likely to find product from the following producers. Daylesford Organics Brendan and KateThe Daylesford duo supply beautiful mulitvarietal apples, salad greens and other organic vegies! Tuki Springs Robert JonesLocated in Smeaton, 20 minutes from Daylesford Tuki Springs is a family owned and operated farm producing fresh water trout, yabbies and lamb. Oz Eels Ben OsborneOwned and operated by the Osborne family, Oz eels have been exporting internationally for almost five years. Loddon Valley Cod Tony ButlerThis sixth generation farming property is in nearby Newstead. With the uncertainty and difficulty of dry land farming, Tony Butler s diversion into aquaculture is paying dividends. Fine Murray Cod now protected in the wild, is frequently showcased on Lake House menus. Western Plains Free Range Pork Judy CroaghWestern Plains pigs live as naturally as possible in a free-range environment, 150 kms west of Melbourne between Ballarat and Geelong. Every two years the entire piggery is relocated to fresh land in an adjacent location. The old site enriched with pig manure is then cropped and allowed to renew itself to its natural balance. Cloud End Morello Cherries Judy BarnesThis long established local orchard supplies Lake House annually with morello cherries for use in desserts, our famous cherry brandy and as a garnish for rich meats. Des O Toole HoneyThis is the second generation of Daylesford's own beekeepers producing a wide range of honeys reflecting local flora Sunrise Organics - Richard and Lia DobsonLocated in Korweinguboora - one of our trusted suppliers of organic herbs, elderflowers and elderberries. Holy Goat Cheeses Ann Marie Monda and Carla MeursThese girls have the happiest and most indulged organically certified goat herd in the state. Meredith Cheeses- Sandy and Julie CameronDelicious fromage frais, sheep s milk yoghurt, sheep and goat s milk cheeses. Nutty Fruit Farm - Joy DurstonWonderful blueberries, boysenberries, currants and cherries Fernleigh Farm - Fiona ChambersOrganic vegetables and certified organic pork products Kyneton Olives - The Trovatello familySecond-generation producers of olive products. There are many more includng our regular gatherers of saffron milk caps and slippery jacks in autumn and morels in spring; suppliers of rabbit and hare and simply locals with 'windfalls' of produce from their garden - too much for personal use.
